Why are black yeasts black?
The black color is due to the production of the dark pigment melanin (also known as a skin pigment in humans) packed in granules within and outside the cell wall. Melanins are amongst the most stable and resistant biochemical materials, known to confer protection against UV irradiation, high temperatures and desiccation.
